Easy Raw Green Salsa

This easy raw green salsa came together in no time thanks to my blender. I buy salsa all the time, but I never realized how easily it could be made. When you make it fresh it tastes way better and it’s simple to make a huge portion for a large group of people if you are entertaining.

This green salsa is mild and subtle enough to be served with shrimp or fish. Feel free to play around with the ingredients, if you prefer more garlic or heat. I actually think this tastes better the next day, once the flavors have had a chance to really marinate together.

Here are a couple ways I love using salsa:

1) I regularly use salsa as a chili base. For ground beef I prefer to use red salsas, but for chicken or turkey, a green salsa would be delicious.

2) My husband and I love breakfast food, especially eggs. Salsa makes a perfect topping to a Mexican breakfast and is a great addition to brunch.

3) Taco salad is a regular weeknight meal at our house and we always use salsa instead of salad dressing.

4) I’ve pressure cooked chicken with salsa in my instant pot, and been very happy with the results.

5) Whole foods has some grain free chip options. So if you have a craving for chips and salsa, feel free to indulge a little.

  • 2 green tomatoes chopped
  • 1 avocado
  • ½ jalapeno without seeds
  • 1 cup chopped white onion
  • ½ cup water
  • 4 limes juiced
  • ½ tsp sea salt
  • 1 bunch cilantro
  • 2 medium garlic cloves pressed
Instructions
  1. Add all ingredients to your blender.
  2. Then blend until desired texture.

 

Easy Oven Roasted Baba Ganoush

This easy baba ganoush recipe roasts baby eggplants in the oven and then combines everything in a food processor. Feel free to play with the recipe and make it your own. I found that it tastes much better after it sits overnight in the fridge, which I love, because make-ahead recipes are great for entertaining and so are dips. I also added a lot of raw garlic, because I love garlic, but if that’s not to your taste, use less, or roast the garlic cloves to make it milder.

I also added some fresh flat leaf Italian parsley, because I already had it in my fridge and since it has a nice mild flavor that goes well with lemon and eggplant. I’m not going to claim that this recipe is authentic, but I thought it tasted good and I would definitely make it again for friends and family to snack on.

Easy Oven Roasted Baba Ganoush

Ingredients
  • 4 baby eggplants
  • 2-3 medium cloves of garlic, pressed
  • juice from half a lemon
  • ½ cup of fresh flat leaf Italian parsley
  • 2 tbsp of tahini
  • ½ cup of extra virgin olive oil
  • sea salt to taste
  • (optional) garnish with fresh parsley, olive oil, and smoked paprika
Instructions
  1. Cut baby eggplants in half, then brush the cut side with olive oil and sprinkle with sea salt.
  2. Put eggplant cut side down on a baking sheet and roast for an hour at 375 degrees.
  3. Take them out and let them cool. Then scoop out the insides of the eggplant and remove skin.
  4. Place eggplant insides into a food processor with tahini, remainder of olive oil, and 2 or 3 pressed garlic cloves, juice of half a lemon, and parsley and blend until desired consistency.
  5. Add sea salt to taste.
  6. Refrigerate overnight.
  7. (optional) When ready to serve, make a swirl with a spoon and drizzle in olive oil and sprinkle smoked paprika and fresh parsley.
Notes
Feel free to sub sweet paprika for smoked paprika.
Use more or less garlic and sea salt, to suit your tastes.

Spicy Italian Sausage and Lentil Soup

This Italian sausage and lentil soup is a favorite in our kitchen. It’s easy, and freezes well. The lentils means it’s not paleo, but it’s still grain, dairy, and gluten free and full of yummy veggies so I still consider it healthy eats.

This past year, my husband and I gave up ordering delivering as our new years resolution to save money. I’m very happy we have been able to achieve our goals, but it means I’ve been less creative and healthy in the kitchen and more concerned with getting dinner on the plate. This recipe was one of my favorites this past year because it’s easy, makes great leftovers that are easy to freeze, and has delicious flavor. Plus, I love hearty soups and during the colder days, they make great comfort food. Not that I mind eating soup when it’s warm. I live in LA near Sawtelle Japantown and I don’t mind eating ramen when it’s 80 or higher degrees out.

Spicy Italian Sausage and Lentil Soup

Ingredients
  • 2 cups of small whole green lentils
  • 2 quarts of chicken broth
  • 2 hot Italian sausage links
  • 2 sweet Italian sausage links
  • 4 carrots, chopped
  • 1 bay leaf
  • 2 medium white onions, chopped
  • 2 cloves of garlic, chopped
  • 1 tbsp of extra virgin olive oil
  • (optional) sea salt to taste
  • (optional) parsely, chopped to garnish
Instructions
  1. Remove casings from sausage and brown in olive oil on medium low heart in a large pot.
  2. Chop onions, garlic, and carrots and add to the pot.
  3. Add lentils and chicken broth to the pot.
  4. Simmer on low until lentils and carrots are cooked through.
  5. (optional) Add salt to taste. This depends on your chicken broth.
  6. (optional) Italian parsley chopped as a garnish

Instant Pot Hard Boiled Eggs

I originally wanted the instant pot because I had made these hard boiled eggs with my mom’s instant pot, and was blown away with how easy they were to peel. I was so happy with them, I turned them all into deviled eggs with a homemade mayo right then and there.  If you haven’t tried my Deviled Eggs recipe you definitely should.

If you can’t tell already with my latest recipes, I’ve been kind of obsessed with my instant pot. I’ve always loved my slow cooker, but this uses the same type of recipes and it cooks everything so fast! One of our new resolutions for 2018, was eliminate delivery, so I’ve been doing a ton of meal planning, and this instant pot comes in so handy. Plus, with Easter, just around the corner, this will also help make your holiday preparations ten times easier, especially if you are cooking for a crowd.

Instant Pot Hard Boiled Eggs

Ingredients
  • 11 extra large eggs
  • 1 cup of water
Instructions
  1. Put the metal steam rack with handles in the instant pot.
  2. Add a cup of water to the bottom, then in one row, line the eggs on top of the steam rack.
  3. Press the egg button on the instant pot and adjust the time to 6 minutes, if it is not already saved.
  4. When timer is finished, use an oven mitt for safety and use the quick release.
  5. Once steam is released, use tongs to move eggs into a bowl with water and ice to stop cooking.
  6. Then feel free to peel eggs whenever you are ready to cook or eat.
Notes
If using regular (not large) eggs use 5 minutes.

Instant Pot Italian Meat Sauce

My recipe for Italian Meat Sauce in the Instant Pot will be a game changer for meal planning. Luckily, my mom and I are both obsessed with our Instant Pot, and when I was visiting over the holidays, we made some amazing pasta sauce, in a crazy short amount of time. There are short ribs, carrots, onions, Italian sausage, and other delicious spices that made this a hit with the whole family. Pour it over spaghetti squash or zoodles to make it paleo, or freeze it for later. I definitely plan on making this regularly, since most restaurants have dairy in their Italian food, and dairy is the one thing I’m still very careful to avoid in my diet. Although I’ve relaxed my standards this past year, the new year is a great time to get back to my favorite paleo foods, and work on eating healthier, exercising more, and stepping up my meal planning game.

Instant Pot Italian Meat Sauce

Ingredients
  • 1 lb pork spare ribs
  • 1 lb ground pork
  • 2 lbs ground beef
  • 1 tbsp honey
  • 1 tbsp tomato paste
  • 2 cans (28oz) tomato puree
  • 1 tbsp chopped fresh rosemary
  • 1 tsp fresh thyme
  • 1 tbsp dried basil
  • 2 tbsp or ice cube of red wine
  • 1 pkg sweet Italian sausage
  • 2 tbsp of olive oil
  • 1 cup of chopped carrots
  • 1 cup of chopped onions
  • 1 tsp sea salt
  • a couple grinds of fresh ground black pepper
Instructions
  1. In a large pan, sear short ribs and Italian sausage in olive oil, 2-3 minutes per side, then add to instant pot.
  2. Then, in a large pan, cook ground beef, ground pork, chopped carrots and onions, until meat is no longer pink.
  3. Add cooked ground beef, pork, carrots, and onions to the instant pot, with honey, tomato paste, tomato puree, chopped rosemary, thyme, dried basil, and red wine.
  4. Then, add to instant pot some sea salt to taste approximately 1 tsp and add a few grinds of fresh ground black pepper.
  5. Close lid of the instant pot and make sure pressured release valve is sealed. Cook on high pressure manual for 60 minutes, then let it release naturally.
