Slow Cooker Turkey Chili

Ingredients
  • 1 medium white onion
  • 1 red bell pepper
  • 2 jalapenos
  • 2 tbsp tomato paste
  • 1 tbsp cumin
  • 1 tsp chipotle powder
  • 3 cloves of minced garlic
  • 2 cups of chicken stock
  • 2.5 lbs of fresh ground turkey breast
  • 2 tbsp extra virgin olive oil
  • ¾ lb chopped cauliflower
  • 1 tsp hungarian sweet paprika
  • 1 tsp smoked paprika
  • 1 lime
  • 1 tbsp fresh chopped cilantro
  • 1 chopped tomato
  • 1 tsp of fresh ground black pepper
  • 1 tsp sea salt
Instructions
  1. Cook ground turkey breast in a large pan with olive oil until turkey breast goes from pink to white, then transfer to crockpot.
  2. Chop white onion, red bepper, tomato, garlic, and cauliflower and add over turkey in crockpot.
  3. Chop jalapenos and remove most of the seeds, then add to crockpot.
  4. Then add tomato paste, cumin, chipotle powder, hungarian sweet paprika, smoked paprika, sea salt, and black pepper to crockpot over vegetables.
  5. Then pour chicken stock over everything in crockpot, and give it a good mix.
  6. Cover crockpot, and set to high for 5-6 hours.
  7. Garnish with fresh chopped cilantro and squeeze in some fresh lime juice before serving.
