"Cheesy" Garlic and Pine Nut Dip

- 2 tbsp or juice of 1 lemon
- 1.5 cups of pine nuts
- 1 large clove of garlic
- 1 tbsp nutritional yeast
- (optional) a chopped cucumber
- (optional) chopped chives for garnish
- Blend pine nuts in a food processor until smooth. Add in nutritional yeast, add pressed garlic, and the juice of one lemon.
- Blend all ingredients until smooth and transfer to a container.
- Let it sit overnight for flavors to meld. It will help mellow the flavor of nutritional yeast.
- (optional) Eat it with chopped cucumber slices and garnish with fresh chopped chives.
